Spinach and Feta Cheese Quiche

I'm not as allergic to feta as I am to other cheeses and milk products, so I thought I'd try it out. And spinach is my favorite food :)

6 oz fresh spinach
6 oz crumbled Feta or Feta flavored soy cheese
couple leaves of fresh basil, chopped
1/2 onion, chopped
1 tomato, chopped
1 1/3 cups soy milk
3 eggs
3/4 cup spelt flour (regular flour can be used here too)
1 tbsp baking powder
2 tbsp canola oil
1 tsp sugar
1 tsp salt
fresh ground pepper, to taste

Preheat oven to 400°F and grease a 10" pie pan and set aside. In a frying pan, saute the onion in a little oil until it starts getting clear. add the chopped tomato, and saute for a few minutes. When the tomato starts breaking up a little, add the basil and spinach leaves until the leaves are wilted.

In a medium bowl combine milk, eggs, flour, baking powder, canola oil, sugar, salt and pepper. Set aside.

Combine the spinach, onion, tomato and Feta and place in the bottom of the pie pan.

Pour the flour, milk and egg mixture over the top.

Bake at 400°F for 25-35 minutes, until puffed and set.
